This sheet pan lemon herb chicken is my go-to on busy weeknights. Everything goes on one pan, into the oven, and dinner is ready in 40 minutes with almost zero cleanup.
Ingredients
- 4 bone-in chicken thighs
- 2 lemons, sliced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried rosemary · 1 tsp thyme · Salt & pepper
Instructions
- Preheat oven to 425°F.
- Toss chicken with olive oil, garlic, herbs, and salt.
- Arrange on sheet pan with lemon slices.
- Roast 35–40 min until golden and cooked through.
